Master class on American marble beef in Khiva on October 28, 2023

A master class on American beef is held for restaurateurs, chefs, sous chefs, buyers of meat products and other players in the HoReCa and retail market of the cities of Khiva and Urgench in Uzbekistan.

The master class will be conducted by Pavel Galkovsky (Moscow, Russia), one of the best specialists in American marble beef. Chef Pavel is a professional expert and a member of the jury of many international culinary competitions.

Chef Pavel will present such cuts as:

  • Ribeye Choice
  • Striploin Choice
  • Beef Liver Choice
  • Hanging Tender Choice
  • Beef Bacon Cured
  • Ground Beef

At the master class, you will receive information about beef production in the USA, about the advantages of using American beef, about the main cuts for the HoReCa segment, see their cutting and slicing.

You will also be presented with various cooking methods, including on Weber grills, and serving options. You will learn which sauces are more suitable for American marbled beef dishes, as well as how to properly handle and store American beef.

The master class will be held on October 28, 2023 in the Milan restaurant of the Faravon Hotel, Khiva.
