American Beef Presentation for Pavlodar Restaurant Sector

USMEF conducted a presentation of American beef and pork for hospitality industry representatives in Pavlodar and Pavlodar Region on November 19, at one of the city’s best-known restaurants, Old Castle.

The purpose of the event was to highlight the high quality of American red meat cuts and muscles and to discuss the key factors that ensure the consistent premium standards of American meat products. 

Invited chef-speaker Pavel Galkovsky, Ambassador of American red meat in the CIS region, introduced premium American beef cuts — Ribeye (Prime and Choice) and Striploin (Prime and Choice), covering:

  • trimming, 
  • cutting, 
  • steak and roast beef preparation.

Chef Pavel also demonstrated work with secondary cuts and muscles, including Brisket and Hanging Tender (Butcher’s Steak): 

  • trimming, 
  • cooking methods, 
  • proper slicing, 
  • doneness levels. 

Chef Pavel shared his recipes for classic and popular sauces for both American beef and American pork. 

To further introduce Pavlodar residents to the superior quality of American red meat, a grill party was held in the evening of November 19 at the Old Castle restaurant. 
Chef Pavel Galkovsky cooked American beef steaks, as well as American pork ribs and chops, for the guests.
