Beef Tallow Pie Crust

Ingredients:

  • 2-1/2 cups all-purpose flour
  • 1 teaspoon salt
  • 1 cup chilled beef tallow, cut into pieces
  • 6 to 8 tablespoons ice water

Safe Handling Tips:

  • Wash hands with soap and water before cooking and always after touching raw meat.

  • Separate raw meat from other foods.
  • Wash all cutting boards, utensils, and dishes after touching raw meat.
  • Do not reuse marinades used on raw foods.
  • Wash all produce prior to use.
  • Cook beef until temperature reaches 145°F for medium rare steaks and roasts 160°F for ground beef.
  • Refrigerate food promptly.

Cooking:

1. Combine flour and salt in a large bowl. Cut in beef tallow using a pastry blender or fingertips until mixture resembles coarse crumbs.

2. Gradually add ice water, 1 tablespoon at a time, mixing gently until dough just comes together.

3. Divide dough in half, shape into discs, wrap and refrigerate at least 30 minutes before using.
