According to Nielsten, from December 2018 to November 2019, sales of beef steaks in Russia in real terms increased by 77.9%, and in money - by 53.4%. At the same time, beef sales in general in 2019 grew in Russia by only 5%. Because of this, the share of steaks in total beef sales increased by 4.3 percentage points, to 15.6%.

A sharp increase in sales of steaks occurred against the backdrop of a decrease in the average price of 1 kg by 14%, to 1,199 rubles. The average retail price of 1 kg of boneless beef in Russia in December 2019 amounted to 491 rubles, according to Vedomosti, citing Rosstat data.

Sales of steaks are growing not only in catering establishments, but also in retail stores. A representative of Magnit said that customers are gradually switching from large pieces of beef to smaller ones, including steaks. Krasnoyarsk “Komandor” noted that in 2019, sales of steaks in chain stores doubled.

Market participants explain the growing popularity of steaks by the increase in the number of steakhouses that have been actively developing in recent years. In addition, Russian manufacturers are actively increasing the production of such products, which reduces its cost.
